Why it works: Cabbage and pepper are a kitchen classic. They rank in the top 5% of all ingredient pairs, and cooks put them together in 4,081 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓
Delicate Cabbag-e
Ingredients
Directions
Prepare
Remove all defective leaves from the cabbage and quarter it, cutting as for coarse slaw.
Cover the cabbage with cold water and let it soak for several hours.
Drain the cabbage and place it in a pot with enough boiling water to cover it.
Cook
Boil the cabbage for about 45 minutes until thoroughly cooked.
Add salt 10 to 15 minutes before removing from heat.
Once cooked, drain the cabbage in a colander and press out the excess water.
Season and serve
Season with butter and pepper before serving.
Optionally, add some of the liquor and fat from boiling corned meats for extra flavor.

What each ingredient does
- Cabbage
- Forms the body of the dish; boiling softens its fibers until tender.
- Butter
- Adds fat and richness, coating the cooked leaves for a silky mouthfeel.
The step that matters
Pressing out the excess water after draining. Cabbage holds a lot of water, and leftover moisture dilutes the butter and pepper and makes the cabbage taste watery. Pressing it out concentrates its flavor and keeps the seasoning clinging to the leaves.
Swap the cabbage
