Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet butter
Forms the rich, fatty body of the sauce and carries its flavour.
Lobster coral and spawn
Gives the sauce its colour and a concentrated lobster flavour.
Prepared mustard
Adds sharp, tangy notes that balance the richness of the butter.
Water or vinegar
Provides liquid for the emulsion, with vinegar adding acidity.

The step that matters

Stir the coral and spawn in smoothly. Butter and water separate easily, so the sauce can break if it is not stirred until smooth. Pressing the coral through a sieve first removes lumps that would otherwise stay in the sauce.

Swap the mustard

How well each one fits the dish's main ingredients (butter, vinegar, pepper, lobster, meat):

  1. Mustardthe original
  2. Capsicumfits about as well
  3. Shallotfits less well
  4. Potatofits less well

Fit is the average pairing score against butter, vinegar, pepper, lobster, meat. Candidates are from the same food group and used in at least 100 recipes.
