Corn Bread

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Sift the cornmeal into a bowl.

  2. Add salt and baking powder, then mix in enough water to create a thin batter.

Rise and bake

  1. Cover the bowl with a cloth and let it rise.

  2. Once risen, stir the batter well.

  3. Pour the batter into a baking pan and bake at 300°F (150°C) until done.

What each ingredient does

Cornmeal
Forms the bulk of the bread, giving it its grainy structure and corn flavour.
Baking powder
Releases gas that lifts the batter so it rises and bakes lighter.
