Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Butter the sides and bottom of a basin.

  3. Cut the bread or rolls into slices.

  4. Line the basin with the sliced bread.

  5. Peel the apples and chop them.

Assemble and bake

  1. Fill the basin nearly to the top with the chopped apples, sprinkling bits of butter and sugar between the layers.

  2. Grate a small amount of nutmeg over the apples.

  3. Soak enough bread slices to cover the apples.

  4. Place a plate and a weight on top to press down.

  5. Bake for two hours.

Serve

  1. Turn the baked apple Charlotte onto a serving plate.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds richness and helps the bread brown and crisp as it bakes.
Sugar
Sweetens the apples and helps them caramelise slightly at the edges.
Tart apples
Provide the main filling, bulk and acidity that balances the sweetness.
Wheat bread or rolls
Forms the outer shell that holds the apples in shape as they cook.

The step that matters

Pressing the layers down before baking. Packing the bread and apples firmly with a weight keeps the shell compact and prevents large gaps, so the charlotte holds its shape when turned out.

Swap the apple

How well each one fits the dish's main ingredients (butter, sugar, wheat):

  1. Vanillafits better
  2. Figfits better
  3. Coconutfits better
  4. Applethe original

Fit is the average pairing score against butter, sugar, wheat. Candidates are from the same food group and used in at least 100 recipes.
