Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Sets the liquid into a firm, wobbly jelly as it cools.
Gum-arabic
Adds body and helps keep the jelly smooth and clear.
Sugar candy
Provides sweetness and balances the tannins of the port.
Port wine
Supplies the main liquid, flavour and colour of the jelly.

The step that matters

Boil until fully dissolved. The sugar candy and gum-arabic must dissolve completely, or the jelly will be grainy and may not set evenly. Boiling also helps the isinglass disperse through the liquid before straining.

Swap the nutmeg

How well each one fits the dish's main ingredients (port wine, sugar):

  1. Cinnamonfits better
  2. Clovefits about as well
  3. Nutmegthe original
