To Roast Woodcocks

Ingredients

Directions

Prepare

  1. Clean the woodcocks and wash them in vinegar and water.

  2. If necessary, draw, crop, and pick them, then wash in 2-3 waters and rub with coarse sea salt.

  3. Plunge each bird into boiling water for 5-6 minutes, drawing them up and down by the legs.

  4. Hang the birds in a cool place to drain.

  5. Before roasting, wash them well, but avoid soaking in water.

Roast and serve

  1. Roast over a clear fire until a bright brown, basting continually.

  2. Roast for about 20 minutes.

What each ingredient does

Woodcocks
The main meat; the birds are cleaned, scalded and roasted as the dish itself.
Coarse sea salt
Rubbed onto the birds to season the surface before roasting.

The step that matters

Plunge each bird into boiling water. Scalding for 5-6 minutes loosens the feathers so they can be picked cleanly; too short a dip leaves feathers stuck, too long can partly cook the skin before roasting.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
