To Roast Coffee
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Roast the coffee
Preheat the oven to 400°F (200°C).
Place coffee in an earthen basin and stir frequently while roasting.
Once roasted, store in a closed bottle or jar to exclude air.
Brew and serve
In a quart filter, add the roasted coffee.
Pour 1½ cups of boiling water slowly over the coffee and let it filter through.
Add another 1½ cups of boiling water and let it pass through.
Press down the coffee grounds, remove the filter, and serve.

What each ingredient does
- Coffee
- Provides the main flavor and aroma compounds that roasting develops and water extracts.
- Boiling water
- Dissolves soluble flavor compounds from the roasted grounds as it passes through.
The step that matters
Stirring the coffee while it roasts. Beans roast unevenly without frequent stirring, so some can scorch while others stay underdeveloped, giving a bitter or flat cup.
