Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Soft shell crabs
- Provide the main protein, which cooks quickly and becomes tender when fried.
- Large egg
- Binds the cracker crumbs to the crab so the coating adheres during frying.
- Cracker crumbs
- Form a crisp, golden coating that browns in the hot fat.
- Lard
- Conducts heat for frying, crisping the coating and adding richness.
The step that matters
Fry in very hot lard. If the fat is not very hot, the coating absorbs oil before it sets, leaving the crab greasy and soggy. Very hot fat seals the crumbs quickly, producing a crisp crust while the crab cooks through in a few minutes.
