What each ingredient does

Egg whites
Whipped to stiff peaks, they lighten the mixture and help it set with a airy, delicate texture.
Bread crumbs
Absorb the milk and butter, giving the mixture body and a soft, moist structure.
Cold cooked chicken
Provides the main protein and savory flavor that forms the body of the timbale.
Milk
Adds moisture and softness, keeping the mixture tender as it cooks.
Butter
Adds richness and flavor, and keeps the mold from sticking.

The step that matters

Gently fold in the stiffly beaten egg whites. Folding rather than stirring keeps the air whipped into the egg whites. That trapped air expands during cooking and gives the timbale its light texture, so deflating it makes the result dense.

Swap the parsley

How well each one fits the dish's main ingredients (milk, bread, mushroom, butter, chicken, pepper, onion):

  1. Garlicfits better
  2. Thymefits better
  3. Parsleythe original
  4. Marjoramfits about as well

Fit is the average pairing score against milk, bread, mushroom, butter, chicken, pepper, onion. Candidates are from the same food group and used in at least 100 recipes.
