What each ingredient does

Chickens
Form the main body of the dish, becoming tender and moist as they simmer gently.

The step that matters

Skim off any scum that rises to the surface. Scum is coagulated protein and impurities released as the liquid heats. Removing it keeps the broth clear and the flavour clean.

Swap the celery

How well each one fits the dish's main ingredients (chicken, ham):

  1. Garlicfits better
  2. Thymefits about as well
  3. Celerythe original
  4. Marjoramfits less well

Fit is the average pairing score against chicken, ham. Candidates are from the same food group and used in at least 100 recipes.
