Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the birds

  1. Draw and wash the birds quickly.

  2. Season with coarse sea salt and black pepper.

  3. Pin a thin slice of salt pork on the breast.

Roast and serve

  1. Place on a shallow pan and bake at 400°F (200°C) for 15 to 20 minutes, basting often.

  2. Serve on toast with currant jelly or bread sauce.

Sweet potato option

  1. For sweet potatoes, cut them in half lengthwise and make a cavity in each half.

  2. Season the bird with salt, pepper, and butter, fit it into the potato, and cover with the other half.

  3. Bake until the potatoes are soft.

  4. Remove the string, tie with a bright ribbon, and serve in the potatoes, garnished with parsley.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Small birds
Form the main protein that is roasted and served as the dish.
Salt pork
Adds fat and savory flavor as it renders over the birds during roasting.
Butter
Adds richness and helps the seasoned bird brown and taste rounder.
Sweet potatoes
Form a soft edible shell that cooks and absorbs juices from the bird.

The step that matters

Basting the birds during roasting. Small birds dry out quickly in dry oven heat. Frequent basting spreads fat and juices over the surface, keeping the meat moist and promoting even browning.

Swap the sweet potato

How well each one fits the dish's main ingredients (pepper, pork, butter, parsley):

  1. Potatofits better
  2. Carrotfits better
  3. Capsicumfits better
  4. Sweet potatothe original

Fit is the average pairing score against pepper, pork, butter, parsley. Candidates are from the same food group and used in at least 100 recipes.
