Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Pluck the partridges carefully and truss them neatly.

  2. Place them in a hot oven at 400°F (200°C) with lard or a piece of white paper over the breast.

  3. Cook for 15 to 20 minutes, or less if the birds are particularly young.

  4. Baste the partridges well during cooking.

  5. Serve with gravy, bread sauce in one tureen, and sauce poivrade in another.
