Eoast Beef

Oven, in the book's wordsA very hot oven

Ingredients

Directions

The book says “a very hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare and roast

  1. Rub the beef with dry mustard or garlic and dust with pepper.

  2. Place the beef in an iron baking pan and add ½ cup of stock or water.

  3. Bake in a very hot oven at 400°F (200°C) until the surface browns quickly.

  4. After 15 minutes, baste the beef and continue to baste often without adding more water.

  5. Cook for 15 minutes per pound for large roasts and 10 minutes per pound for small ones.

  6. After 45 minutes, add a little coarse sea salt to the fat and continue basting.

Serve

  1. Serve with horseradish sauce and garnish with roasted or browned potatoes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Loin or fore ribs of beef
Forms the main meat; its fat bastes and flavours the roast as it cooks.
Stock or water
Adds moisture to the pan at the start, creating steam that keeps the beef from drying early.
Dry mustard or garlic
Adds pungent, savoury flavour to the meat's surface as it roasts.

The step that matters

Basting without adding more water. Spooning the rendered fat over the roast keeps the surface moist and promotes even browning. Adding more water would steam the meat instead of browning it.

Swap the potato

How well each one fits the dish's main ingredients (beef, mustard, pepper, horseradish, sauce):

  1. Shallotfits better
  2. Chivefits better
  3. Lettucefits better
  4. Potatothe original

Fit is the average pairing score against beef, mustard, pepper, horseradish, sauce. Candidates are from the same food group and used in at least 100 recipes.
