What each ingredient does

Thick mayonnaise
Adds fat and moisture that keeps the bread from soaking and carries flavour across the layers.
Bread
Provides the toasted structure that holds the layers together and keeps the sandwich from going soft.
Lettuce leaves
Adds crisp texture and moisture between the meat layers.
Cold boiled tongue
Provides the savoury meat base of the sandwich.
Cold baked turkey or chicken breast
Adds lean, mild meat that gives the sandwich its main body.
Cold boiled ham or broiled breakfast bacon
Adds salty, savoury flavour that contrasts with the milder meats.

The step that matters

Toast the bread and soak the lettuce in weak vinegar. Toasted bread resists moisture from the mayonnaise and fillings, so it stays crisp. Lettuce soaked briefly in dilute vinegar crisps up and gives a slight acidity that balances the rich meats and mayonnaise.

Swap the lettuce

How well each one fits the dish's main ingredients (bread, vinegar, turkey, ham, egg):

  1. Mustardfits better
  2. Capsicumfits better
  3. Shallotfits better
  4. Lettucethe original

Fit is the average pairing score against bread, vinegar, turkey, ham, egg. Candidates are from the same food group and used in at least 100 recipes.
