Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hard-boiled egg yolks
Form the creamy, rich filling that spreads over the toast.
Cream or milk
Forms the liquid base of the white sauce, giving it a smooth, pourable body.
Butter and flour
Flour thickens the cream into a white sauce; butter adds richness and flavor.
Hard-boiled egg whites
Chopped whites add texture and body to the sauce.
Parmesan cheese
Adds savory, salty flavor and browns lightly on the toast.

The step that matters

Removing the sauce from heat once boiling. Flour thickens the cream as it heats, but prolonged boiling can scorch the milk solids and break the sauce's smooth texture. Stirring constantly and pulling it off heat once it boils keeps it smooth.
