Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Strawberries
Provide the main flavour and colour, and their juice gives the base its fruitiness.
Sugar
Sweetens the fruit and milk and softens the texture by lowering the freezing point.
Milk
Forms the liquid body of the base that freezes into the ice cream.
Thick cream
Adds fat, which makes the ice cream rich and smooth with a creamy mouthfeel.
Whipped cream
Adds air and fat, keeping the frozen texture light and less icy.

The step that matters

Freeze rapidly, then add the whipped cream when it begins to freeze. Fast freezing keeps ice crystals small for a smooth texture. Adding whipped cream only once freezing begins lets the air stay in the mixture instead of collapsing as it is stirred into a liquid base.
