Sadie's Coffee
Ingredients
Directions
Pour boiling water over the coffee in the pot and place it on the stove.
Once it comes to a boil or four or five bubbles rise, remove it from the heat.
Pour out a teacupful of coffee and return it to the pot.
Set the pot back on the stove for a minute, then gently pour one teacupful of cold water over the top.
Let it stand for one more minute, then pour off the coffee, which will be bright and clear.

What each ingredient does
- Freshly roasted and ground coffee
- Provides the flavour and body of the brew, extracted by hot water.
- Cold water
- Poured over the top to settle the grounds so the coffee pours off clear.
The step that matters
Removing the pot from the heat at the first boil. Keeping the coffee at a rolling boil over-extracts bitter compounds and can scorch the flavour. Pulling it off the heat as bubbles rise keeps the brew smooth.
