What each ingredient does

Finely ground coffee
Provides the flavour compounds that the hot water extracts into the brew.
Freshly boiled water
Acts as the solvent that dissolves coffee flavour and carries it through the grounds.

The step that matters

Pouring the boiled water a little at a time. Adding water gradually and keeping the pot covered lets it drip evenly through the grounds, so extraction stays steady and the coffee does not turn bitter or weak.
