What each ingredient does

Blackberry juice
Provides the main liquid and fruit flavour that forms the body of the cordial.
Loaf sugar
Sweetens the cordial and helps preserve it by binding water.
French brandy
Adds alcohol that preserves the cordial and carries the spice aroma.
Ground cloves
Contributes warm, pungent spice aroma to the cordial.
Ground cinnamon
Contributes sweet, warm spice aroma to the cordial.

The step that matters

Simmer covered for 30 minutes. Covering the pan limits evaporation, so the liquid keeps its volume and sugar concentration. Too much reduction would make the cordial overly thick and change its balance of sweetness and spice.
