Caramel for Flavoring Custards, Etc
Ingredients
Directions
In a small saucepan, stir the sugar over medium heat until it melts, stirring constantly.
As soon as the sugar is melted, pour it into the liquid you want to flavor, protecting your hands from the steam.
Remove the pan from the heat often to prevent overheating.
Alternatively, pour the caramel onto an oiled marble slab or platter and let it cool.
Once cooled, break it into pieces and pound fine in a mortar.
Add the powdered caramel to the hot liquid to be flavored.
To line a mold, pour the liquid caramel into a charlotte russe or other mold.
Quickly turn the mold to let the caramel coat the inside before it hardens.
