Ingredients

Directions

  1. Cut the chops to uniform thickness, retaining the bone if desired.

  2. Braise the chops with fine-cut vegetables until tender, then cool in the liquid.

  3. Finish cooling under a weight.

  4. Pare the ice-cold chops neatly and cover with chaudfroid sauce.

  5. Decorate with capers and figures cut from cooked egg white.

  6. Once fixed, cover lightly with aspic jelly and sift cooked egg yolk around the edge.

  7. Dress the chops on heart leaves of lettuce against a vegetable salad macedoine.

  8. Cover the ends of the bones with paper frills.
