Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef shin
Slow simmering breaks down connective tissue and bone, giving the meat tenderness and the broth body.
Rice or pearl barley
Starch swells during simmering, adding body and thickening the broth slightly.
Potatoes
Their starch softens and thickens the broth while the pieces hold their shape.

The step that matters

Adding the potatoes last. Potatoes added too early break down and turn the broth cloudy and mushy. Adding them about 30 minutes before serving lets them cook through while keeping their shape.

Swap the summer savory

How well each one fits the dish's main ingredients (beef, pepper, carrot, turnip, rice, celery, potato):
