Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton neck
Provides the meat and rich fat that flavour the broth as it simmers.
Carrots
Add sweetness and body to the broth during the long stew.
Turnips
Soften during stewing and add a mild, slightly sweet flavour to the broth.
Onions
Add aromatic savoury depth that builds the broth's flavour.
Barley
Thickens the broth slightly as its starch releases during long simmering.

The step that matters

Skim the broth regularly. Fat and fine impurities rise to the surface as the meat boils. Removing them as they form keeps the broth clear and stops it tasting greasy.
