Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Game birds
Provide the main meat and rich flavour that the broth is built on.
Lean beef
Adds savoury meat flavour and body to the stock as it stews.
Lean ham
Contributes salty, savoury depth when fried and simmered into the soup.
Onions
Browning in butter builds sweetness and aroma into the base of the soup.
White celery
Adds a fresh, mild vegetable aroma near the end of cooking.

The step that matters

Heat the water slowly and stew gently. Gentle heat draws flavour and gelatin from meat and bone into the broth while keeping the meat tender and the broth clear. Boiling vigorously makes the soup cloudy and can toughen the meat.
