Why it works: Clam and crab share more aroma than cooks usually use. They rank in the top 8% of all ingredient pairs, and cooks put them together in 17 recipes. Both carry 2,3,5-trimethylpyrazine, which smells cocoa, roasted. The science ↓

What each ingredient does

Fish
Provides the main savoury flavour and body of the stock.
Onion
Browning builds sweet, deep savoury flavour in the stock.
Butter
Carries flavour from the onion and fish into the stock as fat.

The step that matters

Cook until the onions are well browned. Browning the onions develops deeper, sweeter flavour through the Maillard reaction and caramelisation. Pale onions give a flat, weak stock.

Swap the tomato
