Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Baked White Fish

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the fish

  1. Cut out the backbone of the fish, leaving 2 inches from the tail.

  2. In a skillet, fry the chopped onion in 1 ounce of butter until soft.

  3. Add the soaked bread, remaining butter, salt, pepper, and parsley or sage; heat through.

  4. Remove from heat and stir in the beaten egg yolks.

  5. Stuff the fish with the mixture, sew it up with twine, and wrap with white tape.

Bake and serve

  1. Rub the fish with butter and place it in a baking pan with a little hot water.

  2. Bake at 350°F (175°C) until cooked through.

  3. For the dressing, mash the hard‑boiled egg yolks with salad oil, mustard, pepper, and vinegar to taste.

What each ingredient does

Eggs
Beaten egg yolks bind the stuffing so it holds together when baked.
Stale bread
Soaked and squeezed bread adds body and moisture to the stuffing.
Butter
Fat that enriches the onion and stuffing and helps the fish brown and stay moist.
Onion
Softened in butter, it adds sweetness and savory aroma to the stuffing.
Hard-boiled eggs
Mashed yolks with oil and mustard form a rich, smooth dressing.

The step that matters

Stuffing the fish with the egg yolk mixture. The stuffing must be off the heat before the beaten egg yolks go in, since hot mixture can scramble the yolks into lumps instead of binding them smoothly.
