To Boil Corned Beef

Ingredients

Directions

Prepare the beef

  1. If the beef is not pre-soaked, soak it in cold water overnight.

  2. Place the beef in a pot and cover with cold water.

  3. Bring to a boil over high heat, skimming off any scum.

  4. Reduce heat and simmer slowly for 2.5 hours until tender.

Cool or keep warm

  1. If not serving hot, let the beef cool in the pot, then drain in a colander. Cover with a cloth to keep it fresh.

Add the vegetables

  1. For a boiled dinner, skim fat from the pot and transfer some liquid to another kettle.

  2. Add cabbage, turnips, carrots, and parsnips to the kettle with the beef.

  3. About 30 minutes before serving, add peeled potatoes to the beef pot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Corned beef
Long, slow simmering turns the tough cut tender and gives the meat its savoury flavour.
Cabbage
Its leaves soften in the simmering liquid and absorb the seasoned broth.
Potatoes
Starch thickens the cooking liquid slightly and gives the dish a soft, filling body.
Carrots
Natural sugars add gentle sweetness that balances the salty beef.

The step that matters

Simmer slowly, do not boil hard. A hard boil toughens the meat's muscle fibres and can leave it dry and stringy. A gentle simmer lets connective tissue break down slowly, so the beef becomes tender.

Swap the potato

How well each one fits the dish's main ingredients (beef, horseradish, cabbage, turnip, carrot, parsnip):

  1. Beetrootfits better
  2. Leekfits better
  3. Broccolifits better
  4. Potatothe original

Fit is the average pairing score against beef, horseradish, cabbage, turnip, carrot, parsnip. Candidates are from the same food group and used in at least 100 recipes.
