What each ingredient does

Brisket of beef
Slow stewing breaks down its connective tissue, leaving the meat very tender.
Flour
Thickens the soup into a sauce as it boils.
Butter
Adds richness and a smooth, glossy body to the sauce.
Catsup
Adds sweetness and acidity to the sauce.
Prepared mustard
Adds sharp, tangy flavor that balances the richness of the sauce.

The step that matters

Skim the surface thoroughly after boiling. Fat and foam that rise during the first boil cloud the broth and taste greasy if left in. Removing them early gives a cleaner, clearer soup and sauce.

Swap the mustard
