What each ingredient does

Flour
Forms a roux with the butter that thickens the milk into a smooth binding sauce.
Milk
Liquid that, with the flour, makes a thick sauce that holds the croquettes together.
Cold meat
Provides the main savory filling and flavour of the croquette.
Mashed potato
Adds bulk and softness to the filling, helping it hold its shape when shaped.
Beaten egg
Coats the shaped croquettes so the crumbs adhere and form a crisp outer layer.
Cracker or bread crumbs
Forms a crisp, golden browned crust when fried.

The step that matters

Cooling the mixture before shaping. The filling must cool so it firms up enough to hold its shape; shaping it warm makes it soft and sticky, and the croquettes may break or split during frying.
