Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal shoulder
Slow braising breaks down connective tissue, leaving the meat tender and moist.
Butter
Fat that helps brown the meat and carries flavour into the gravy.
Onion
Softens in the hot fat and adds savoury aroma to the gravy.

The step that matters

Browning the veal. Browning the meat tightly covered over medium heat builds deep flavour through the Maillard reaction. Turning it lets every side colour evenly before the long simmer.

Swap the onion

How well each one fits the dish's main ingredients (veal, egg, butter, pepper):

  1. Capsicumfits better
  2. Asparagusfits better
  3. Chivefits about as well
  4. Onionthe original

Fit is the average pairing score against veal, egg, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
