Scalloped Mutton and Tomatoes

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 350°F (175°C).

  2. In an earthen baking dish, layer bread crumbs on the bottom.

  3. Add a layer of cold roast mutton slices, followed by a layer of sliced tomatoes.

  4. Season each layer with coarse sea salt, black pepper, and bits of butter.

  5. Repeat the layers, finishing with a top layer of tomatoes and spread with bread crumbs.

  6. Bake for 45 minutes and serve immediately.
