Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Coral and spawn of a boiled lobster
Provides the rich, colourful flavour and the orange-red colour of the sauce.
Butter
Adds richness and a smooth, silky mouthfeel that carries the lobster flavour.
Water or vinegar
Thins the butter into a loose sauce, with vinegar adding a touch of sharpness.
Prepared mustard
Adds a sharp tang that balances the richness of the butter and coral.

The step that matters

Sieving the coral and spawn. Pounding and sieving breaks down the coral and removes lumps and fibrous bits, so the sauce stays smooth rather than grainy. Coral is fragile and can clump, so take time to push it fully through.

Swap the mustard

How well each one fits the dish's main ingredients (lobster, butter, vinegar, pepper, meat):

  1. Mustardthe original
  2. Capsicumfits about as well
  3. Shallotfits less well
  4. Potatofits less well

Fit is the average pairing score against lobster, butter, vinegar, pepper, meat. Candidates are from the same food group and used in at least 100 recipes.
