What each ingredient does

Tomatoes
Provide the main body, acidity and flavour of the sauce.
Butter
Adds richness and fat, carrying flavour through the sauce.
Flour
Thickens the sauce when cooked with butter, giving it body.

The step that matters

Cooking the butter and flour. The flour must be stirred in the melted butter until it browns and froths slightly. This cooks out the raw flour taste and forms a roux, which thickens the sauce more evenly when combined with the tomato pulp.
