What each ingredient does

Tomato pulp
Forms the body of the ketchup and supplies most of its liquid and flavor.
Brown sugar
Adds sweetness that balances the acidity of the tomatoes and vinegar.
Vinegar
Adds acidity that gives the ketchup its tang and helps preserve it.
Salt
Seasons the ketchup and draws out moisture during the thickening boil.

The step that matters

Boil until it runs from the mouth of a bottle. Reducing by boiling concentrates the tomato and sets the thickness. Stirring often keeps sugars and solids from scorching on the bottom of the pot, which would add a burnt taste.

Swap the onion
