Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Firm green peppers
Form the pickle's shell and hold the filling while it cures.
Chopped cabbage
Adds crunch and bulk to the filling.
Green tomatoes
Add tartness and body to the filling.
Vinegar
Acidifies the brine, preserving the peppers and sharpening their flavor.
Brown sugar
Balances the vinegar's sharpness with sweetness and depth.

The step that matters

Pouring the vinegar mixture over three mornings. Repeated pouring of hot, sweetened vinegar gradually draws the brine into the peppers and cabbage, so the pickling is even. Stopping early leaves the filling under-seasoned and less well preserved.

Swap the tomato

How well each one fits the dish's main ingredients (pepper, cabbage, mustard, clove, vinegar, sugar):
