Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cauliflower
Forms the firm, crisp body of the pickle that holds up in the jar.
Cider vinegar
Provides the acidity that preserves the vegetables and gives the pickle its sharp flavour.
Sugar
Balances the sharpness of the vinegar with sweetness.
Mustard
Adds a sharp, pungent flavour to the brine.

The step that matters

Draining the vegetables until dry. Any water left on the vegetables dilutes the hot vinegar mixture, weakening its acidity and flavour and making the pickle less stable in the jar.
