Blueberry Pickles

Ingredients

Directions

  1. Pick over the blueberries, using only sound ones.

  2. Fill jars or wide‑mouthed bottles with blueberries, leaving an inch of space at the top.

  3. Pour in molasses to fill the spaces, adding more as it settles until the berries are covered.

  4. Cover the top with a piece of cotton cloth to keep insects out.

  5. Store in a cool place away from direct sunlight.

What each ingredient does

Blueberries
Supply the fruit itself, providing the main flavor, color and texture of the pickle.
Molasses
Sweetens the fruit and fills the jar around it, adding deep flavor and helping keep the berries preserved.

The step that matters

Keep the berries fully covered with molasses. Fruit exposed to air can ferment or grow mold. Topping up the molasses as it settles keeps every berry submerged, which protects the fruit from spoilage.
