Curds and Cream

Ingredients

Directions

Make the curd

  1. Pour 1 tablespoon of prepared rennet into each quart of milk.

  2. When the milk has curdled, tie it loosely in a thin cloth and hang it to drain without pressing.

Drain and chill

  1. Once drained, place the curd in a mug and set it in cool water, changing the water frequently.

Serve

  1. When serving, gently ladle out any whey from the mug without pressing the curd.

  2. Transfer the curd to a deep dish and pour fresh cream over it.

  3. Serve with powdered loaf sugar and a nutmeg grater.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the curd's body as its proteins coagulate after the rennet is added.
Prepared rennet
Enzyme that clots the milk into soft curd and separates off the whey.
Fresh cream
Adds richness and a smooth, fatty contrast to the mild curd.
Powdered loaf sugar
Adds sweetness to the curd at the table.
Nutmeg
Adds a warm aroma that complements the dairy flavour.

The step that matters

Drain without pressing. Pressing squeezes out whey and forces the curd to become dense and dry. Letting it drain under its own weight keeps it soft, moist and tender.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, sugar, cream):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Peppermintfits less well

Fit is the average pairing score against milk, sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
