Welsh Rarebit

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the topping

  1. In a mortar, mix the grated cheese with the egg yolks, grated bread, and butter.

  2. Add the mustard, salt, and pepper, and beat the mixture until well combined.

Assemble and bake

  1. Toast the slices of bread and remove the crusts.

  2. Cut the bread into shapes and spread the cheese mixture thickly on top.

  3. Place the prepared bread in a 400°F (200°C) oven until hot and slightly browned.

Serve

  1. Serve immediately while hot.

What each ingredient does

Dry cheese
Melts into the sauce and gives the topping its rich, savoury flavour.
Egg yolks
Emulsify with the butter and set when heated, binding the topping and making it creamy.
Grated bread
Thickens the mixture and adds body so it spreads rather than running off the toast.
Butter
Adds fat for smooth texture and helps the topping melt and brown evenly.
Made mustard
Adds sharp, acidic bite that balances the richness of the cheese and egg.

The step that matters

Baking until hot and slightly browned. Egg yolks set and the cheese melts within a short time in a hot oven; overbaking can make the topping tough or oily and dry, while underbaking leaves it cold and runny.
