Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the filling and set into the omelette structure as they cook.
Cold meat, fish, game, or poultry
Supplies the main filling, giving the omelette its substance and savory flavor.
Butter
Enriches the pan and adds flavor while helping the omelette release and brown.

The step that matters

Browning the mixture before adding eggs. Browning the meat or fish first develops savory flavor through the Maillard reaction. Pouring eggs over an unbrowned mixture gives a paler, blander result.
