What each ingredient does

Sardines
Provide the rich, savory fish base that forms the filling.
Lettuce
Adds a fresh, crisp texture in small pieces against the soft filling.
Lemon juice
Adds acidity that brightens and balances the oily richness of the fish.

The step that matters

Pound the sardines into a paste. Pounding breaks the fish and any softened bones into a uniform mass that spreads evenly. Leaving lumps or uneven pieces makes the filling hard to spread and gives inconsistent texture in each bite.

Swap the lettuce

How well each one fits the dish's main ingredients (pepper, bread, lemon):

  1. Capsicumfits better
  2. Spinachfits better
  3. Tomatofits better
  4. Lettucethe original

Fit is the average pairing score against pepper, bread, lemon. Candidates are from the same food group and used in at least 100 recipes.
