Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Watercress
Provides a fresh, peppery flavour and moist leafy filling.
Hard-boiled eggs
Add body and richness to the filling, binding it softly.
Fresh butter
Coats the bread, adding fat and richness and limiting moisture soaking in from the filling.
Stale loaf of bread
Stale bread is firmer and holds its shape when thinly sliced and pressed.
Lemon juice
Adds acidity that brightens the flavour of the filling.

The step that matters

Dry the watercress thoroughly. Leftover water makes the filling wet and soaks into the bread, so the sandwiches turn soggy. Pressing out moisture before mixing keeps the bread firm.
