Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Combine white flour, Graham flour, cornmeal, baking soda, molasses, milk, and salt in a large bowl.

  2. Mix well.

  3. If using sweet milk, substitute baking powder for baking soda.

Steam and finish

  1. Pour the batter into a mold and steam for 4 hours.

  2. After steaming, place the bread in a 350°F (175°C) oven for 15 minutes.

  3. Serve warm with butter.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Graham flour
Gives the bread its hearty, coarse texture and nutty flavor.
Cornmeal
Adds body and a grainy texture to the crumb.
Molasses
Adds sweetness, dark color and a rich flavor.
Baking soda
Reacts with the acidic molasses to produce gas, helping the bread rise.
Milk
Hydrates the flours and forms the batter, adding moisture and tenderness.

The step that matters

Steaming the batter. The bread is cooked by steam in a sealed mold for a long time. Keeping the mold covered and the water boiling steadily ensures even cooking and a moist, set crumb without a soggy or underbaked center.
