Why it works: Wheat and milk are a kitchen classic. They rank in the top 6% of all ingredient pairs, and cooks put them together in 2,418 recipes. Both carry (e,z)-2,6-nonadienal, which smells cucumber, melon. The science ↓

Ingredients
Directions
The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Shape the braid
Prepare the wheat bread dough as usual.
Divide the dough into three equal pieces, each the size of a pint bowl.
Dust a surface with flour, then roll each piece into a 12-inch long rope, tapering the ends.
Braid and bake
Place one rope on a baking tin, attach the ends of the other two ropes to it, and braid them together.
Press the ends together to seal the braid.
Brush the top of the loaf with milk.
Let it rest for 10 minutes.
Bake in a 400°F (200°C) oven for nearly an hour.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Wheat bread dough
- Its gluten network gives the braid structure and lets it rise and hold its shape.
- Milk
- Brushed on top, it helps the crust brown and gives the loaf a glossy sheen.
The step that matters
Press the ends together to seal the braid. Dough keeps expanding in the oven as gases form and the yeast works. Loose or unsealed ends can pull apart, so a firm seal keeps the braid intact while it rises and bakes.
