Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Provide structure and lift, helping the batter set into a light, airy fritter.
Cream
Adds richness and moisture, giving the batter a tender texture.
Prepared flour
Forms the body of the batter, setting into the fritter's structure when fried.
Sweet lard
Heats to transfer energy quickly, frying the fritters and browning their outside.

The step that matters

Frying in hot lard. The lard must be hot enough before the batter goes in. If it is too cool, the fritters absorb excess fat and turn greasy instead of browning crisply and cooking through.

Swap the nutmeg

How well each one fits the dish's main ingredients (cream, egg, flour):

  1. Nutmegthe original
  2. Jalapenofits about as well
  3. Capersfits less well
  4. Turmericfits less well

Fit is the average pairing score against cream, egg, flour. Candidates are from the same food group and used in at least 100 recipes.
