Ingredients

Directions

Prepare the oysters

  1. Dip the oysters in the beaten eggs, then coat them with cracker or bread crumbs.

  2. Alternatively, wash the oysters in the shell and place them on hot coals or a hot stove, or bake them in a hot oven.

  3. Open the shells with an oyster knife, ensuring none of the liquor is lost.

Cook the oysters

  1. Cook the oysters on a fine wire gridiron over high heat.

Assemble and serve

  1. Prepare the toast in advance and pour the rich cream sauce over it.

  2. Sprinkle finely cut celery on top of the toast.

  3. Quickly dip the toast in hot salted water, then place the oyster and liquor on top.

  4. Season with salt, pepper, and add 1 teaspoon of melted butter over each oyster.

What each ingredient does

Oysters
Form the main body of the dish, cooked until tender and served with their liquor.
Eggs
Bind the cracker or bread crumb coating so it adheres to the oysters.
Cracker or bread crumbs
Form a crisp coating that browns during cooking.
Rich cream sauce
Adds richness and moisture over the toast.
Butter
Adds fat and richness over each oyster.

The step that matters

Open the shells without losing the liquor. The oyster liquor is the oysters' own natural juice. Losing it dries the oyster and removes much of its briny flavor, so keep it in the shell when opening.

Swap the celery

How well each one fits the dish's main ingredients (oyster, egg, bread, cream, sauce, pepper, butter):

  1. Nutmegfits better
  2. Parsleyfits better
  3. Capersfits better
  4. Celerythe original

Fit is the average pairing score against oyster, egg, bread, cream, sauce, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
