What each ingredient does

Egg whites
Whipped to stiff peaks, they give the filling a light, airy body and bind the fruit and nuts.
Figs
Chopped figs add moisture and natural sweetness to the filling.
Sugar
Sweetens the egg whites and helps stabilise the foam while it is whipped.
Almonds
Chopped almonds add texture and a nutty richness that contrasts the soft fruit.

The step that matters

Spread the filling between layers of hot cake to slightly cook the egg.. Raw egg whites are only partly cooked by the filling's contact with hot cake. Spreading while the cake is hot gently warms the egg, but the filling is not fully cooked, so the heat transfer is limited and the texture stays soft.

Swap the fig

How well each one fits the dish's main ingredients (raisin, almond, egg, sugar):

  1. Vanillafits about as well
  2. Figthe original
  3. Datesfits less well
  4. Coconutfits less well

Fit is the average pairing score against raisin, almond, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
