Pastry Sandwiches

Oven, in the book's wordsA rather quick oven

Ingredients

Directions

The book says “a rather quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Roll out the puff paste thin.

  2. Place half of it on a baking sheet.

  3. Spread your choice of jam evenly over the paste.

  4. Cover with another thin layer of puff paste.

  5. Press the edges together all around.

  6. Mark the surface with a knife to indicate where to cut after baking.

  7. Bake at 400°F (200°C) for 20 to 30 minutes.

  8. Before done, brush with egg white and sprinkle with sifted sugar.

  9. Return to the oven to color.

  10. Once cooled, cut into strips and serve in a pyramid shape.
