Cranberry Tart Pie

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Wash and pick over the cranberries.

  2. Stew the cranberries in just enough water to cover them until they burst and become soft.

  3. Sweeten the cranberries with sugar and mash them smooth, or leave them unmashed if preferred.

  4. Line pie plates with thin puff pastry.

  5. Fill the pie plates with the cranberry mixture and lay strips of pastry across the top.

  6. Bake in a moderate oven at 350°F (175°C) until golden.
