Ingredients
Directions
Make the custard
Prepare a quart of mock custard and pour it into a large glass fruit dish filled with stale cake pieces.
Stir the mixture gently.
Boil 1½ cups of milk to make the cream.
In a bowl, mix ½ cup sugar, 1 heaping teaspoon cornstarch, 2 tablespoons grated chocolate, 1 egg, ½ cup milk, and a pinch of salt.
Pour the mixture into the boiling milk.
Simmer for 1-2 minutes.
Top and chill
Beat the egg whites until stiff and sweeten with white sugar.
Spread the whipped egg whites over the top.
Chill in the refrigerator until cold.
Once cold, pour the cream over the cake just before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Stale cake
- Soaks up the custard and gives the dessert its soft, layered body.
- Egg whites
- Whipped to stiff peaks, they form a light foam that tops the dessert.
- Egg
- Thickens the cream as it cooks, giving it body and a smooth set.
- Cornstarch
- Thickens the cream when heated with the milk, giving it a smooth texture.
- Milk
- Forms the base of the cream, which thickens and flavours the dessert.
The step that matters
Simmering the cream mixture. Heat must be gentle and the mixture stirred so the egg and cornstarch thicken smoothly without curdling or lumping.
